A long time ago, I was on Pinterest {when am i NOT?} and I found a picture of breakfast ham cups. I thought they looked yummy and simple, and I've been wanting to try them since.
This week has been a little cray-cray, we came back from our mini-honeymoon and school made Chreston and I both crash right into reality again {I had three essays due in one week...definitely not fun}. Needless to say, we haven't gone grocery shopping in a little while so I had to find a quick & easy thing to make for breakfast this morning.
I wanted to do ham but didnt have any, so I just used what I had, sliced pepper turkey from the Berkeley Bowl {local organic store}. I didn't have fresh veggies other than tomatoes, and the only cheese we have is shredded mozzarella. Add in a few organic eggs, and voila!
+ Preheat oven to 350 degrees
+ Spray each cup with non-stick cooking spray & line the meat in a each cupcake pan cup {or muffin tin, whatever you like to call it} :)
+ Add in stuff you'd like in an omelette- chopped tomato, green onion, etc.
+ Then add in your favorite beaten egg mix. I used about 4 eggs for me and the hub and very light salt and pepper. If I had it, I would normally use a little heavy cream as well, but today I didn't use that.
+ Bake time! Wait till the eggs are cooked all the away and the meat is nice and toasted-looking around the edges {20-30 minutes}, then they're done!
+ Take them out, let them cool for a sec, then sprinkle cheese, salt and pepper on top! :)
